Zucchini-Tortellini Harvest Soup

From: Fresh from the Farm Stand

Ingredients:

  • 1 Pound Italian Pork Sausage Links, Browned and Thinly Sliced
  • 1 Onion, Chopped
  • 1-2 Carrots, Peeled and Chopped
  • 2 Cups Tomatoes, Diced
  • 2 14Ounce Cans Vegetable Broth


  • 14Ounce Can Pizza Sauce
  • 2 Cups Water
  • 1 Bay Leaf
  • 1-2 Zucchini, Shredded or Sliced
  • 9Ounce Package Refrigerated Cheese Tortellini, Uncooked

Directions:

  • In a slow cooker, combine all ingredients except zucchini and tortellini. Cover and cook on low setting for 5-7 hours. Add zucchini and tortellini to slow cooker; cover and cook on low setting for an additional hour.
  • At serving time, discard bay leaf.
