Best and Worst Ways to Cook Veggies for Optimal Nutrients

Microwave - The microwave is the overall best method for cooking veggies and retaining the nutrients.  The exception: cauliflower.
Griddle - A griddle works well for beets, celery, onions, swiss chard and green beans.
Baking - Baking is good for some veggies, and not so good for others.  The veggies that do well with baking are artichokes, asparagus, broccoli and peppers.
Frying - Not a good method if you want to keep your nutrients.  Most if not all veggies lose nutrients during the frying process.
Boiling - Another poor method where most veggies lose nutrients.  The one exception being carrots, whose carotenoid content increased using this method.
Steaming - Steaming is best for broccoli and zucchini.
Sauteing - This process is thought to be similar to microwaving because it is cooked at high heat for a short time.
