White Tail Deer
We raise deer for two reasons. Our main focus is shooter bucks. A shooter buck is a male who has typically 2-4 years old when he is shipped to a game farm, and is shot by someone.
Our other avenue with deer is to butcher any doe fawns (1 year old) that we don't want to use for our breeding stock. The butchered deer will be made into a wide variety of sausages.
