We raise 8 pigs a year, focusing on a proven feeding regimen that has resulted in leaner, more moist meat that will compete with the top producers. We get our piglets (40 + lbs.) from a small farm just north of us in mid-April. We get them up to size on a mixture of corn and minerals till about mid-June. At this point we reduce their corn/mineral mix by 50% and fill in the other 50% with green matter out of the garden. Green matter consists of everything under the sun that comes out of the garden that cannot be put in the CSA box like the outside of the cabbage heads, kohlrabi leaves, bad kale leaves, bad tomatoes and peppers, etc.
