Tasty Tomato Muffins

- In a large bowl, combine flour, sugars, baking powder, baking soda and seasonings; set aside. In a food processor, combine eggs, butter, vanilla and tomatoes. Process until tomatoes are finely chopped, being careful not to overdo.
- Add tomato mixture to flour mixture; stir just until moistened. Fold in raisins and nuts.
- Fill paper-lined or greased muffin cups 3/4 full.
- Bake at 350 degrees F. for 20-25 minutes, until a toothpick comes out clean. Cool muffins in muffin tins for 5 minutes; remove from tins to a wire rack. Serve warm or cooled.
