Pineapple Zucchini Bread

Ingredients:

  • 3/4 cup butter
  • 1 cup Sugar
  • 2 eggs
  • 1 cup grated zucchini
  • 1 cup crushed pineapple
  • 1/2 cup whole wheat flour

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 3/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon salt

Directions:

  • Preheat oven to 350 deg. F.
  • Grease and flour 2 loaf tins.  7.5in X 3.5in.
  • Cream butter and sugar thoroughly.
  • Beat in eggs.
  • Stir in zucchini and pineapple.
  • Stir in dry ingredients.
  • Combine well.
  • Pour into tins and bake 40-45 minutes, until tops are golden   and fork comes out clean.
  • Turn out while warm, and cool on wire rack.
