Cold Zucchini Soup

From: Fresh from the Farm Stand

Ingredients:

  • 4 Zucchini, quartered and sliced
  • 1 Bunch Green Onions, Chopped
  • 4 Cups Chicken Broth
  • 1 Teaspoon Salt
  • 1 Teaspoon Pepper


  • 2  8 Ounce Packages Cream Cheese, Cubed and Softened
  • 1 Teaspoon Fresh Dill, Snipped
  • 8 Ounce Container Sour Cream

Directions:

  • In a saucepan over medium-high heat, combine zucchini, onions, broth, salt and pepper. Cook, stirring occasionally, for 20 minutes.
  • Stir in cream cheese and dill. Process soup in batcches in a blender until smooth. Sir in sour cream. Cover and chill 8 hours.
